【Audit9 湯水系列1】4步搞定最鮮甜好味又暖胃的粟米排骨湯

Audit9成日捱夜,好傷肝㗎,一定要飲返啲湯水補補佢。打份工啫冇必要搞到自己五勞七傷,所以小編特意請咗一個煲湯高手,整咗呢個【Audit9 湯水系列】,無論你係手殘黨,定係廚藝高手,相信你都可以喺短時間之內整到Audit9 補身湯水比自己、做緊Audit嘅男女朋友、老豆老母。


尼個粟米排骨湯真係好好飲!!!我更是連喝好幾碗都喝唔夠!排骨湯底鮮美中帶點清甜,排骨燉到軟爛脫骨,而且超級超級養胃,對身體補充營養和氣十分重要。


做起上黎超簡單!跟住我的做法4步就夠了,而且做出黎的湯底奶白又濃郁!喝完之後個身超暖超舒服!


食材


排骨250g,一條粟米,一條紅蘿蔔,適量白蘿蔔/淮山/蓮藕片/冬瓜/蔥/薑


步驟


第一步:將250g的排骨切塊 (都可以係肉檔叫老細切埋),冷水下鍋落一勺料酒,大火煮開轉細火煮3分鐘,撈起來洗下佢,之後用厨房紙控乾水分。


第二步:洗一洗紅蘿蔔、粟米同其他配料,紅蘿蔔批皮,之後將佢切粒,粟米切塊。攞個兜擺起佢。


第三步: 倒少少油落個鑊度,落D蔥薑爆香佢,加入排骨翻炒到表面微黃,將第二步個兜野倒晒落去。


第四步: 加入約食材三倍的熱水,加1小勺醋,大火煮開,轉最小火燉1小時左右,加半勺胡椒粉,少量多次加鹽調到自己的口味就好啦!


⚠️Tips


1. 做排骨湯三部曲:1焯水2煎3燉


2. 記得焯水時用涼水,燉的時候要用熱水!


3. 一定要煎一下,排骨湯的顏色先會更好看!


4. 加醋可以促進排骨裡的成分溶在湯裡,湯底更鮮甜噢!
